做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖焖。
