做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候(hòu )加入盐(yán ),翻炒(chǎo )均(jun1 )匀稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
