做法:春笋切(qiē )成片后(hòu )加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
