做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入(rù )少量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
