做法(fǎ ):春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
