做法:春笋切成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉(ròu )片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
